Superfood Chocolate Raspberry Chia Seed Pudding


Decadent, flavorful, light, and oh so healthy, this chocolate raspberry chia seed pudding is the perfect way to put a pep in your step.

Chia seeds have become a staple in many vegan diets today. Loaded with protein, fiber, and much more, it’s easy to see why this tiny superfood has become so popular.

I decided to take traditional chia seed pudding to the next level by combining it with antioxidant rich cacao powder and coconut milk for a rich serving of healthy, waist-slimming fats. Use this quick and super easy to make recipe to start your day, as a snack, or to healthfully indulge after dinner.

My goal is to provide you with nutritious, delicious, satiating, whole foods recipes, and I want you to understand every single ingredient to benefit your health and wellness.

Ingredients (makes 2 servings)

Chia seeds - ⅓ cup

Coconut milk - 2 cups

Maple syrup (or sweetener of choice) - 2 tbsp

Raw cacao powder - 4 tbsp

Raspberries (for topping) - 1 cup


Get to know your food:

Chia seeds - packed with Omega 3’s, plant protein, fiber, magnesium, potassium AND antioxidants. Who knew that such a teeny tiny little seed could pack so much punch?

Coconut milk - Made from the white flesh of mature brown coconuts, this plant-based alternative to cow’s milk is high in a saturated fat known as MCT’s (medium-chain triglycerides). MCT’s are well-known for their fat burning, waist slimming, and heart healthy properties. In addition, 1 cup of coconut milk contains 5g of protein, 5g of fiber, iron, vitamin c, potassium, magnesium, and more!
